Ingredients
- Pink grapefruit, sectioned and skinned (or any sweet citrus)
- Avocado, chunked
- Mint, torn
- Pine nuts
Optional
- Celery, thinly chopped
- Baby shrimp, cooked
- Butterhead lettuce, torn (varieties include Boston and Bibb lettuces)
- Red onion, chopped or thin sliced
Dressing
- Orange juice (or any sweet citrus juice)
- Olive oil
- Whole-grain “country” mustard
- Honey
Directions
Choose proportions of all ingredients according to your taste.
- Put all the main ingredients together in a salad bowl.
- In a separate dish, mix up all the dressing ingredients.
- Just before serving, pour dressing over main ingredients, and toss everything together.
